This weekend was baking weekend! I made this amazing mini muffins to snack on during the day, and they are great for a tiny dessert. They only have 3 carbs, 3 protein and .5 fat!! 28 calories a piece!
My recipe is for 20 mini muffins. Here it is!
67 grams Banana
1 large egg
1 cup 2% lowfat plain yogurt ( I use FAGE)
1 scoop (34grams) Cellucor Strawberry Milkshake protein powder
1/4 cup Bob’s Red Mill gluten free 1 to 1 Baking Flour
1tsp baking powder
1tsp coconut sugar
First smoosh your banana with a spoon in a bowl. Next add all your ingredients and mix with a mixer until smooth. Pre-heat the oven at 350 degrees and grease your pan with coconut oil or olive oil, whatever you prefer is fine. I wil lsay that coconut oil tends to make my muffins stick for some reasons o I use regular olive oil spray. Then scoop the batter into 20 mini muffins and bake for 15 minutes. Let them cool for about 5 minutes and enjoy!
P.S try not to eat to many at once!
