Out of everything I baked this weekend these have to be my favorite. I decided to experiment with cottage cheese and the reward was amazing! These came out to 81 calories a piece, 10 carbs, 7 protein and 1 fat. My recipe is for 6 muffins.
1 scoop (34grams) Molten Chocolate Cellucor protein powder
1/4 cup gluten free 1 to 1 baking flour ( Bob’s Red Mill)
1/2 cup 2% milkfat small curd cottage cheese (Kraft)
85 grams Banana
1tsp baking powder
1tsp coconut sugar
First smoosh banana with a spoon in a mixing bowl. Next add all your ingredients and mix with a hand mixer for 5-7 minutes until you get all the powder mixed in. this batter looks chunkier because of the cottage cheese but it still bakes well. Pre-heat your oven at 350 and bake for 15 minutes.
