GF CoCo Cookies

I have the biggest sweet tooth! I’m always looking for recipes for anything Gluten free and chocolaty!

Here is my new creation! Only 38 calories per cookie! 5 carbs, 1 fat and 3 protein! 🙂

Ingredients:

21g (1 1/2 TBSP) Organic High fiber Coconut Flour ( I use Bob’s Red Mill)

60g Banana peeled

1/4 cup Vanilla Greek Yogurt

1tsp Coconut sugar

1Tbsp Cocoa Powder

10g Multi-purpose mix Quest Powder

1 large egg

Directions:

Mix Greek yogurt and banana first. With a wooden spoon smoosh the banana until it mixes with the yogurt well. Then add dry ingredients and mix with a hand mixer until smooth. Separate with small ice cream scooper or a tbsp into 9 balls and add 3 chocolate chips to each one. Set oven to 350 degrees, and bake on parchment paper for 40 minutes.
