Protein Muffins!

This weekend I experimented with the Quest Baking protein powder again, and was successful!

I made Chocolate Chip muffins and Blueberry Vanilla muffins. I must say the Chocolate chip ones came out better but try making both and you decided! I’m slightly bias because I love anything chocolate!

Chocolate Chip protein Muffins! 90 calories, 1 gr fat, 14 gr protein and 5 carbs!

Ingredients:

14 gr Organic High Fiber Coconut Flour

1 Tbsp Cocoa powder

4.5 Tbsp All Whites (egg whites)

1/2 scoop Cellucor Molten Chocolate protein powder

1 Tbsp 65% dark chocolate chunks

56 gr Quest Multi-purpose mix

1 tps baking powder

1 tps vanilla extract

1/4 cup splenda

1/2 cup water

Mix all ingredients in a bowl, except for the dark chocolate chunks. I used coconut oil to grease the cup cake tins, it gives it a delicious taste and its much better for you then other cooking oils. Pre-heat oven at 350 degrees. After mixing ingredients you should have enough for 5 muffins if you fill them just a little past half- way. Add 3  65% dark chocolate chunks to each muffins and bake for 15 minutes! Let them cool for 5-10 minutes and enjoy!
